1 pound ground beef
1/2 medium onion, chopped
1/2 green pepper, diced
1 – 1/2 teaspoons salt, divided
1/2 teaspoon pepper
2 tablespoons butter
6 medium potatoes (about 2 – 1/4 pounds), peeled and finely shredded
3 eggs, beaten
1/3 cup milk
2 cups (8 ounces) shredded cheddar or mozzarella cheese
In a 12 inch stove-top or electric skillet over medium heat, brown beef with onion, green pepper, 1/2 teaspoon salt, and pepper. Remove meat mixture from skillet and drain fat. Reduce heat to low. Melt butter; spread potatoes over butter and sprinkle with remaining salt. Top with beef mixture. Combine eggs and milk; pour over all. Cook, covered, until potatoes are tender, about 30 minutes. Top with cheese; cover and heat until cheese is melted, about 5 minutes. Cut into wedges or squares to serve. Yield: 4 to 6 servings.
Just a little note…. I used about the equivalent of one whole onion and I used the whole green pepper as well. And Cathie, you may want to cook it in a 375 F. oven since you have a gas stove like me. That is what I did. I didn’t want to burn the bottom of the dish by cooking it on the stove top! Let me know what you think of it when you make it! Art loved it and wants me to pack him the leftovers for his lunch at work tomorrow. And it’s really fun to make…. I love all of the yummy layers.
